Turning cabbage into slaw with a Vitamix® machine is much faster than shredding it by hand or in a food processor. The key is to use the wet chop method (see recipe). For more protein than peanuts alone provide, top this salad with cooked chicken or turkey, or tofu.

Set a colander in the sink. Cut each cabbage quarter crosswise in half. Place 2 chunks in the blender container and add enough cold water so that the cabbage floats above the blades. Put the lid on securely and turn the variable speed dial to the highest setting. Pulse once, let the cabbage settle for a moment, then pulse again. Lift out a bit of the cabbage with a slotted spoon to check the consistency; if needed, pulse once more to shred it more finely. Pour the cabbage into the colander to drain. Repeat with the remaining cabbage. Let the cabbage stand in the colander while you prep the remaining vegetables.

Put the pepper chunks in the blender container. Add the green onions and mint. Add enough cold water so that the vegetables float above the blades. Put the lid on securely and turn the variable speed dial to the highest setting. Pulse once, let the ingredients settle for a moment, then pulse again to finely chop. Pour the vegetables into the colander with the cabbage to drain. Lift the colander and shake vigorously to get rid of the excess water, then, with your hands, lift and toss the vegetables in the colander to shake off even more water. Set aside.

Put the lime juice, tamari, fish sauce, oil, sugar, garlic, and chile in the blender container. Put the lid on securely, set the dial to variable speed 1, and start the machine. Increase the speed to 8 and blend for 15 seconds.

Transfer the vegetables from the colander to a large bowl. Pour the dressing over the top and toss very well (at this point, the slaw can be covered and chilled for up to 1 hour; it will get moister as it stands). Divide the slaw among plates and sprinkle each portion with peanuts. Top with the chicken, turkey, or tofu, if using, and serve right away.
